There are just TWO WEEKS until Christmas! I am both SO EXCITED and SO RUSHED because I have so much to squeeze in. Bake exchange at work, baking for family dinners, baking my favourites for ME to snack on! Shortbread is my all time favourite Christmastime snack, especially because it’s so easy to make on a whim with ingredients you almost certainly already have!
And with chocolate chips and sprinkles, even happier!
What you need: 1 cup of Butter – room temperature 1/2 cup Icing Sugar – sifted 1 1/2 cup of Flour 1/4 cup Cornstarch 1/4 teaspoon salt 1/2 teaspoon of Vanilla 1/2 cup of Chocolate Chips and/or Sprinkles (I choose to add both for extra colour!)
How to make them: 1. Preheat oven to 325°F and grease cookie sheets 2. With an electric blender mix the butter and icing sugar until quite fluffy. Then add in the flour, cornstarch, salt, and vanilla until everything is combined. Hand mix your chocolate chips and sprinkles. 3. Scoop your dough out with a spoon (balls should be about golf ball sized) onto your greased cookie sheets, and flatten with a fork. Add extra sprinkles to the top. The recipe makes ~36 cookies 4. Bake for 15 minutes. Cookies just be just barely golden when you pull them out of the oven. Let them cool (if you can!)
These cookies are so fluffy and yummy. I personally like to throw them in the freezer and think they taste even better somehow when they are chilly. Enjoy! xox
I was really excited for this day! I’m almost always singing along to some songs, or even better dancing along around my house (mostly to incredibly cheesy pop!) hahaha. Music energizes me and makes me incredibly happy and I have just SO MANY FEELINGS behind SO MANY SONGS.
But I spent ALL DAY pondering on *only* 5 favourites. Like if I HAD TO chose only 5 songs to listen to for the rest of my life and not get bored… So here they are:
I am a bit of a fraidy cat and there are lots of things that absolutely terrify me… like balconies (I avoid the second floor of malls because those scare the heck out of me ahh don’t lean on the edge!!), throwing up, those dang basement bugs (TOO MANY LEGS!), and being late (I’m always in a rush)!
But I think my biggest fear – and the one that I am most afraid of posting about (eek!) – is people/social interaction. I have pretty bad social anxiety and it stops me from living life to the fullest. My heart just races when I see people whether I know them or not (and even online!), and words just don’t come out. So I feel lost in a world where everyone is busy chatting up a storm.
I’m a bit of a hermit and I’ve created my own little pink world which makes me incredibly happy. But I also feel like I’m missing out on so many things like just going out with friends, or to parties, or sharing more of my own life on social media.
Writing that down helps SO MUCH!! I am okay with being who I am (someone’s gotta be the shy one!), but I’d like to meet new people and work through the things that are holding me back and be EVEN HAPPIER. LET’S DO IT! 😀
Purchasing my own home is my proudest moment! I loved being able to paint it PINK (it’s a huge childhood dream come to fruitition!) and decorate anyway I want to (rainbows and kawaii and unicorns, oh my!). I am very much a hermit so my own little home is an extension of who I am. My favourite thing is that when I do leave, I know I get to come home to PURE HAPPINESS!
Is being paid to cuddle kitty cats an option?! Well it should be! My somewhat unrealistic dream job is to open a kitty cat cafe where people would come snuggle cats who looking for homes, and then eat my delicious baked treats! 😀
I would also love to spend my life CREATING and selling what I make! I love making stuff and making things happy so spending my whole day doing that would be super cool.
