I just had a BIG bowl of ice cream for dinner, so my resolution to eat a little bit less sweets is going quite well I’d say. 😉 To make up for it, I decided to knit a basket of fruit goodies over the past week or so!
They’re pretty yummy looking on their own, but I decided that a cute little face makes them even more irresistible! ^_^
Here are the patterns I used! They’re all super easy and quick so you’ll be able to throw together a fruity mix quick!
Pie is another brand new baked good for me! I’ve always wanted to do it, but never knew where to start. Turns out make pie is easier than I thought!
I followed this recipe for Mixed Berry Pie from Just So Tasty. The bright red colours of the strawberries, raspberries, and blueberries are tart and bright, and cinnamon really gives it that festive flavour!
The crust is crisp and buttery and while it was easy to make, it did take a big chunk of the day to make because it needs to rest in the fridge for three hours. The biggest challenge for me was the lattice pattern, as you can tell. But overall, I’m very happy with how it turned out!
This pie is not overly sweet and the fruit is so refreshing! Best of all, no soggy bottoms here!
Fruit day was actually my most feared day of this whole challenge! Something about going from ultra decadent chocolate and sugary candy treats to well… fruit seems like such a let down! So finding a recipe that I would actually want to make and eat would be a challenge.
But fortunately all my fears subsided when I came across these Thick & Chewy White Chocolate & Cranberry Cookies from Salt and Baker! These big soft cookies have white chocolate, rolled oats, and dried cranberries which are deceptively candilicous!
These cookies just came out of the oven, and I was so excited about them that I ate one hot out of the oven and it certainly tasted like Christmas and happiness. So bye-bye fruit cake, hello fruit cookies!
