25 Days of Christmas Baking: Day 16 – Chocolate

I was so excited for chocolate day! I mean, who wouldn’t be excited about *having to* eat chocolate chips and lick melty chocolate from spoons while making pretty treats to share with friends (if they last long enough to give away ;))?!

There are only four simple ingredients to chocolate truffles: 3 cups of melting chocolate, a can of sweetened condensed milk, 1 tbsp of vanilla, and sprinkles! All you have to do is melt the chocolate, condensed milk, and vanilla in a double boiler, cool, roll, and then enjoy! The recipe and full instructions can be found here from Lord Byron’s Kitchen.

They are a bit messy but it’s completely worth being completely coated in chocolate for these little bites!

My super funfetti 29th birthday!!

Yesterday I turned 29!! Which I can’t even really believe! When I was a kid, 29 seemed the most ridiculous age possible~ so far away and SO OLD AND MATURE. I DEFINITELY feel young at heart and happier than ever. I didn’t spend my actual birthday doing anything SUPER AWESOME because I had to work and then went to sleep very early.

BUT…. TODAY WAS VERY EXCITING! And full of sprinkles and rainbows and excitement!

I made some homemade ice cream very first thing this morning. Because it’s my birthday! So ice cream is a must! 😀

There are only two ingredients needed: heavy cream and sweetened condensed milk. With a handmixer, whip the heavy cream (half a litre / 16 ounces) until you get little peaks. Then add in a whole can of the sweetened condensed milk until the mixture thickens up.

Finally, add in your favourite flavours! I added in sprinkles into this batch, but other favourites are broken up peanut butter cups, chocolate chips, broken cookie bits, the possibilities are totally endless and yummy. Throw it in the freezer for a few hours until it’s fully frozen and THAT’S IT (I don’t even buy ice cream anymore because I can make infinite ice cream)!!!

Next up… I baked my colourful cake!! I ended up using a cake mix (which of course is far easier, but honestly just as tasty). I added 1 1/4 cups of water, 1/3 cup of avocado oil, and 3 eggs, mixed and tah-dah!

By this time, I was HUNGRY! So I saved a little bit of the cake batter and made Hello Kitty waffles!! I’ve had my Hello Kitty waffle maker for a while, but haven’t had a chance to actual use it yet. I added MORE sprinkles for more fun. Look how cute and colourful!!!

Now PARTY TIME!!! Anyone wanna come celebrate?!?!
